Quick Recipe: Lentil Tomato Mustard Salad

Keep it light and hassle-free with this lentil salad! Low in calories and high in nutrition!

What you need (4 people):

200g lentils cooked*

1 red onion

3 ripe tomatoes

Handful fresh baby spinach

1 avocado

For the mustard dressing: 

Whisk the following ingredients together:

2 Tbs olive oil

1 Tbs Dijon mustard

1 tsp red wine vinegar

1 tsp honey

Juice of 1/2 a lemon

Coarse salt and pepper

Add water if consistency is too thick.

* To cook the lentils use 1 part lentils 3 parts water in pot and leave to boil on medium heat for 20 minutes.
