If you are looking for something light for dinner, try this Zucchini, Potato, Celery and Broccoli Soup!
My favourite thing about this soup is that its full of chunky vegetables and its a simple, fuss free recipe with no blending needed.
A handful of ingredients that taste amazing and fresh!
What you need (serves 2):
1 Tbs extra virgin olive oil
1 medium red onion chopped
100g celery chopped
100g zucchini chopped
2 medium potatoes pealed and chopped
100g broccoli
1 vegetable stock cube in 1 litre of water
Grana padano/Parmesan shavings
S&P to taste
What you do (under 60 minutes):
Fry the onion, celery, zucchini and potatoes in olive oil on medium heat with lid on, until onion is translucent.
Then add the stock and water and bring to a boil. Lower heat and let simmer for 45 minutes.
Steam broccoli and rinse with cold water to retain crunch and bright colour.
Plate soup and top with broccoli, grana padano shavings and season to taste.
