Healthy Calamari Paella

Here’s a quick dinner recipe, that I posted on Instagram, that never made it to my blog.

What you need:

1 tbs butter

1 red onion

1/4 cup pine nuts

200g brown wild rice

3 cups veg stock

4 medium tubes of calamari, cut into rings

2 tbs olive oil

1 lemon

4 baby marrows

200g mixed mushrooms

1/4 cup peas

1 tbs parsley

1 block feta cheese

Coarse salt and black pepper

What you do: 

Simply sautée onion in butter. Cook the rice with half the pine nuts in stock and add onion.

Grill the calamari rings in olive oil and lemon. Grill or steam all vegetables and mix with rice. Serve with crumbled feta cheese, toasted pine nuts and salt and pepper to taste.
