Tomato and Goats Cheese Tart

When life seems too overwhelming, I like to cook!

There’s definitely something comforting about choosing a handful of ingredients, and slicing and dicing them into something scrumptiously beautiful.

And unlike other aspects of life, when the kitchen is a mess, you can just put everything back in its place.

So if life seems a bit out of control at the moment, pass by the store on your way home and grab these four ingredients (and a bottle of your favourite wine) and take a time-out as you slice, sauté and bake away.

Even better, invite some friends over… There’s nothing like some good conversation over food to boost your future ideas, your special friendships and even inspire you a little.

A home cooked meal can feed more than just your tummy!

What you need:

400g Frozen Ready Rolled Puff Pastry

100g Goat’s Milk Cheese

1 Red Onion

350g Bella Tomatoes

What you do:

Preheat oven to 200 degrees. On a lightly floured surface, roll out puff pastry to your preferred size and shape and then transfer to a parchment-lined baking sheet. Fold over 1/2-inch border on all sides and press edges to seal. Refrigerate for 10 minutes.

Meanwhile, in a large skillet, add sliced onions and teaspoon of butter, cook until soft. Add tomatoes, drizzle with olive oil and season with salt and pepper, stirring frequently, until soft.

Brush pastry with egg and water mixture and bake until golden brown and crisp, 15/20 minutes. Let cool slightly.

Top with goat cheese. Arrange tomato and onion mixture evenly over goats cheese spread.

Cut into squares and serve warm or at room temperature.
