Rosemary, Lemon and Berry Crumble

So I’m starting this week on a sweet note…

It’s going to sound crazy but I’m the kind of girl who would rather have two appetisers than a dessert. I just don’t have the biggest sweet tooth. Well I think it’s a little because I’m not the greatest baker, and most desserts require precision and following the recipe to a T.

I’m more of an experimenter and this was definitely an experiment.

Mixed berries, lemon, rosemary and crème fraiche makes this baked crumble perfectly fresh, sweet and tart!

What you need:

400g mixed berries

120g treacle sugar

1 lemon

1 tsp vanilla essence

1 sprig rosemary

60g unsalted butter

100g flour

90g caster sugar

50g oats

Crème fraiche

What you do:

Preheat the oven to 180 C. Place the berries in a pie dish and sprinkle the treacle sugar. Add the juice of the lemon, vanilla essence and rosemary. For the topping, rub the butter into the flour. Add the caster sugar and oats while stirring. Sprinkle the topping over the berries. Bake for 30 minutes and serve with crème fraiche.
