Hot cross buns had their moment to shine over the Easter period and are now on sale in most shops or at least the price has decreased quite a bit… I can’t understand why, as I love to eat them all year round!

When trying something different, it’s always a risk but if you’ve got the right ingredients you can’t really go too wrong… And I’d definitely say that vanilla ice-cream, mixed spices, raisins and hot cross buns are the RIGHT ingredients.

What you need:

1 tub vanilla ice-cream

1 packet of traditional hot cross buns

Mixed spice (normally cinnamon, ginger, nutmeg, all spice, cloves etc. combined)

½ cup raisins

Wax paper

What you do:

Break off bite sized pieces of the hot cross buns and place on an oven sprayed baking tray. Place in 140 degrees Celsius oven (with fan), in order for the pieces to crisp and dry out.

Let the vanilla ice-cream melt until you are able to stir it with ease. Pour into a mixing bowl, add the raisins and mixed spices to your preferred tasting. Once the hot cross buns are golden in colour and crisp in texture fold them into the ice cream.

Line a cake dish with wax paper, and slowly pour the ice-cream mixture. Place in the freezer until frozen and remove 20 minutes before serving. Slice like a cake.
